Cookbook, VegNews, and Veg Times cooking challenge (Final week-free choice!)
The idea is to cook at least 3 recipes from each book or website per week. Use the cookbook if you have it, can find it at the library, or have recipes from online, OR find new recipes to try from VN or VT. We'll post our reviews and photos here, and I'll add reviews to cookbook compilation threads or the blog recipe thread.

I think there's one other sausage flavour we haven't tried though.
I couldn't think of anything brunchy I wanted to have with dinner last night and I won't have time to cook tonight or tomorrow night, so I'll either try and line something up for Thursday/Friday night dinner or I'll just do some brunch baking on the weekend! : )
You could try them with a smaller amount of cherries, or without the cherries (which fb did, cheater).
I made the scones tonight, which I've made before, and they are so good! I often make an orange variation of them with orange glaze. Really easy and yummy.
Scones: (Apple Rosemary) - this is a delicious flavor combo. my husband is a purist and liked them but wasn't as impressed. in terms of texture, these are good but did not come out as perfectly scone-like as the scone recipe from VWAV (when I made those with raisins, my (british) husband exclaimed, "this is as real as it gets!"). i may make these again... i am becoming very fond of scones thanks to Isa.

VB Tomato Rosemary Scones
I liked these! I wasn't sure I would because other people had said they were quite sweet. They are sweet and I think next time I would use less sugar, maybe half the amount. I don't really know what is meant by a can of tomato sauce so used a can of tinned tomatoes and blitzed them in the blender. I'm not sure how much fresh rosemary I used but I also used a bit of dried too. I should have used more as the bits that had moer herbs in were much better. The texture of the scones was great and I'll make these again.
Basic Pastry Crust - This is a solid recipe. I used 1/4 cup EB and had to add a little extra water. I was pleased with how easy the dough was to work with and it tasted great too.
Mushroom, Leek, and White Bean Pie - so delicious! this is kind of pain if you have only a small food processor (mine holds just 1.5 or so of ingredients so i had to divide everything into smaller batches) but I think it wouldn't be much work otherwise. I used the pie crust in the book and made the pie the night before so I could just stick it in the oven after work for an easy dinner. I followed the recipe very closely. I might add a little nutritional yeast next time but this is already fantastic.

Haha, yes, I've definitely had scones!!! I didn't try them for a while because they looked kind of hard and not appetizing, but I finally tried one a couple years ago- they're delicious!
ok so I did the VB Cornbread Waffles with Pantry Mole Rojo and Seitan.....but I'm gonna review them separately :P

It was easy and quite quick to put together. I really liked it before I put the chocolate in, and t was good after but I preferred it without the chocolate...just to sweet with chocolate and peanut butter in there. I also think maybe a touch too much peanut butter for my liking. We didn't use the green pepper as N doesn't like them much but I don't think that was too much of a problem. When N tried it he thought we'd had it before and on questioning he thought it was the same as the VWAV seitan with peanut sauce. I can see where he was coming from because I did find this quite peanut buttery. So yeah, although I enjoyed this recipe I'm not sure it's great written as is, but I may play around with it and tweak it. I did like the cornbread waffles with it and am now sold on savoury waffles.

Yes! Excellent. I used the smaller amount of sugar as I was making these to go with the mole rojo. Really good and nice flavour. The texture was perfect coming out of the waffle iron, but when I toasted them they were too hard - but that's my mistake nothing to do with the recipe. I'll use this again if I want cornbread. Yum!
Final week already?? That was fast. It was awesome and I enjoyed this challenge. Not sure what I'll do this week though.

AFR smoky split pea soup
Really good! I believe I followed the recipe except used regular paprika + liquid smoke. It seemed like a lot of paprika, but it worked out well. Split peas always have great flavor. I might have cut down on the thyme just a bit because it's not my favorite. Great flavor, quick (I think I cooked mine longer than 40), and made about the right amount. Soups usually make too much for us, and we don't love leftovers all the time. This has some leftovers, but not a ton.
AFR Lasagna with roasted cauliflower ricotta and spinach
Woah, super bland. Really gutted with this - I ate it but I DID NOT enjoy it at all. I was looking forward to this as I liked the idea of the cauli/ricotta and it tasted good before baking, but once baked, bland. I'll stick with my usual lasagna recipe in future.
OMG Baked Onion Rings
Even though I mucked this up, it came out great. I used some bread to make my bread crumbs (as I usually do) but for whatever reason my breadcrumbs didn't come out fine - so I used big blobby bread crumbs....meaning that the onions didn't get coated too well. BUT they came out lovely and crisp and yum and great! Yeah!
When I asked N what he thought of them he was like' eh, ok'...so then I said they weren't as good because the breadcrumbs came out too big...when he realised I'd made the onion rings he was much more impressed and said i should make them again.
