Cookbook, VegNews, and Veg Times cooking challenge (Final week-free choice!)
The idea is to cook at least 3 recipes from each book or website per week. Use the cookbook if you have it, can find it at the library, or have recipes from online, OR find new recipes to try from VN or VT. We'll post our reviews and photos here, and I'll add reviews to cookbook compilation threads or the blog recipe thread.

VWAV White Bean & Roasted Garlic Soup
Well, I love garlic and so I really super duper loved this recipe. It is lovely and galicky, but because the garlic is roasted it is quite mellow. It was super quick to throw together, so simple to make. Without a doubt I'll be making it again. I think AC is right - it is quite a light soup so would be great as a starter. It's summer here and so it was great as a main served with crusty bread and salad. The recipe said it served 6 - maybe as a starter but for us for a main it would serve 3 or 4....maybe I really am just a piggy!

Curried tempeh-mango salad sammiches - Pure genious. I loved this. The perfect combination of ingredients that came together for the perfect salad. Instead of a sandwich (can't bring myself to say "sammich"), I created a wrap with raw lacinito kale and a whole wheat torilla..(genius on my part). and gobbled it up.

I made the mushroom sauce that goes with the black eyed pea/quinoa croquettes last night as a sauce to go on pasta as the recipe suggested.
Flavour-wise, it's very similar to most mushroom gravies and to the stroganoff recipe, but it did work really well with pasta and my husband really enjoyed it and said he wouldn't mind if I made something like that more often.
The croquettes sounded awesome too, I just didn't have enough quinoa/time to cook the black eyed peas.
Tofu Dill Salad Sandwiches - overall this is good. as expected, it mostly tastes of dill. i enjoyed the first half of the sandwich but then got bored of it.
Baked Cajun French Fries - these are great fries. i had high hopes and was expecting something more, but they are still excellent. i didn't measure anything out but i think my amounts were very close to those stated. I might play around with increasing the amounts of some of the spices next time.
Tempeh Sausage Crumbles: Very yummy and easy. I didn't steam them at all, I don't think that they need to be steamed. Will make again
Potato and Tempeh Sausage Pizza: Pretty good. The only thing that I thought was weird was the potatoes...maybe I didn't get them thin enough, but I felt like they were a little undercooked. Mum thought they were okay, but they weirded me out.
Wow, everything looks great everyone!!!!! I have been wanting to make those tempeh crumbles, and the sausage patties from VWAV...will have to do so.
OWW- I left a copy of the mushroom sauce on my fridge to make tonight with the croquettes....
I am SUPER behind here, but I have some VCON recipes I didn't post, (but did make last week, so not as behind as it appears)
The Roasted Fennel and Hazelnut salad with shallot dressing (VCON)
This was great, my first time having fennel..I subbed a lot, but the general idea was there. I made the shallot dressing exactly as per the recipe, and it was great, I subbed sauted Kale for the chicory, and added some pecans to the mix. Very good, I think it was my first time making fennel, and I already bought more for this week.
Lemony Potatoes (VCON)
I made these with the fennel salad, and ate them all on one plate, mixing everything together (I am weird). The potatoes were great, not as lemony as I expectd, which was a good thing, they were just right. Taj and Kea liked them too.
Brocolli Millet Croquettes (VCON)
These were absolutely delicious, I (and the family) loved them...I couldn't get them to stay together when cooking (and I made the millet the night before, so it was def. cooled. It didn't matter though, they tasted great!

Cold Udon Noodles with peanut sauce and seitan - I'm not a fan of peanut sauce, but thought what the heck, and had low expectations. I was very pleasantly surprised that this tasted amazing! I used my favorite seitan recipe which is from La Dolche Vegan, as I don't like hers as much and I didn't use any soy sauce in the sauteeing of the seitan. Otherwise I pretty much followed her instructions and ingredients. Loved loved it. To keep it from being too rich I didn't use all the peanut sauce and have about 1/3rd of it leftover for something else.

Chili sin Carne al Mole
I think that I have ad this before when oww bought chili to our house, but this is the first time I have made this recipe. I really really liked it. I do normally add cocoa to my regular chili but not as much as this recipe called for. I did sub a couple of things - the chili powder available in the US is not available here as far as I'm aware, so I used some cayenne, ground coriander and a bit more cumin than called for. I also used a can of chopped tomatoes, and half blackstrap molasses and half golden syrup, instead of all regular molasses. I also used half the amount of beans and added some chunks of mushroom instead. I didn't simmer for quite as long as called for but it didn't seem to effect it at all. A great recipe that I'll definitely make again, also very quick and easy to make. I will still use my regular chili recipe as that is very different but this will make a nice change sometimes.
Falafel
A good falafel recipe. I made a half batch but accidentally used the full amount of breadcrumbs. I was concerned once I realised but carried on anyway. It really didn't seem to be detrimental at all....maybe because they were fresh breadcrumbs and so were moister than non-fresh ones? I also discovered I had run out of onions *gasp*, and so used a couple of spring onions instead, which seemed ok, and also used dried parsley instead of fresh. I decided to bake them instead of frying, just because I don't really like frying things. They worked out great, and really good flavour. I've not really had much luck with falafel before but this is a good solid recipe, and one I'd make again.
Mushroom and Sun dried Tomato Risotto
I had to sub quite a lot and it turned out excellently and I think that if I didn't sub anything it would be really really amazing. I used spring onion instead of shallots, couldn't find any dried shitake mushrooms, so used normal white ones in the stock, used regular white mushrooms instead of cremini, and dried thyme instead of fresh. But as I've said even with all the subs it was great. Yeah it's a bit of work involved with all the stirring, but I didn't find it too tiresome and certainly no worse than other risottos. Delicious and will definitely make again - and with the correct ingredients too!
VWAV - wanting to contiue to challenge myself to try new things in this cookbook, and continue to participate in the weekly challenge, and needing to use up a bunch of spinach I got from the CSA, I found this yummy dish by looking up spinach in the index.
I don't have my usual picture because my camera battery is dead. I might take a pic of the leftovers later.
Chickpea and spinach curry - There is no possible way I wouldn't love this dish...everything I love is it. She offers up a good combination of spices that make it delish. I didn't have any garlic in the house (horrors!) but I did have a scallion and garlic powder and made do with that. I added cayenne for heat. I cut down on her cooking time, not simmering but few minutes rather than 20. I used all the tomato juice which was about 1/2 cup, and she calls for 1/4 cup. I served it over brown rice and gobbled it up.

Coconut Pancakes with Pineapple Sauce - we didn't like these, although i made some changes... for the sauce, i used tapioca flour instead of arrowroot powder and pureed the chunks a little bit with an immersion blender. my husband, who likes pineapple a lot, didn't care for the sauce either. The pancakes themselves were alright. the texture was okay (slightly dense), the coconut flavor was good, but a little too much nutmeg for my taste. i also had to add more soymilk but that may have been b/c i used white whole wheat flour.
