Cookbook, VegNews, and Veg Times cooking challenge (Final week-free choice!)

The idea is to cook at least 3 recipes from each book or website per week. Use the cookbook if you have it, can find it at the library, or have recipes from online, OR find new recipes to try from VN or VT. We'll post our reviews and photos here, and I'll add reviews to cookbook compilation threads or the blog recipe thread.

Amy, on the tangine recipe I posted above, the instructions on the recipe said this: " If you can't find harissa, substitute sriracha sauce and 1/4 tsp. each of ground cumin and ground coriander" ......which is what I did as I always have sriracha sauce and spices on hand.  I was a very interesting and tasty combination.

The Best Pumpkin Muffins - these are soo delicious! i had a can of pumpkin pie mix (with sugar/spices),  so I increased the amount of canned pumpkin, and reduced the sugar, spices, and liquid components. I also used half AP and half white whole wheat flour.  I added the walnuts which definitely add something nice to them. i love pumpkin in baked goods and these are definitely among my favorite muffins! they rose well and have a light fluffy texture.

tweety - I'll photocopy that recipe for the winter.  To me minestrone just isn't summer foodz, but I want to make at least one recipe from EDBV at some point as I had to pay a whole NZ$2 to get the book from the library.  It's not all fail though....when i was checking out whether they had EDBV I found they had Vegan on the Cheap and Party Vegan and they both have recipes I definitely want to try.

Vegetarian Times:

Deep Chocolate Vegan Cake http://www.vegetariantimes.com/recipes/8705?section=: I made this without the frosting and I added some cinnamon and cayenne pepper. This is basically just a wacky cake, but I like the use of coffee instead of just water as the liquid...makes the cake nice and rich. Very good!

Southwestern Salad with Avocado-Lime Dressing http://www.vegetariantimes.com/recipes/11318 : Mehh....not my personal favourite flavour profile. I'm just not into the whole lime flavour. Mum liked it, but I wouldn't make it again.

Mexican Rice http://www.vegetariantimes.com/recipes/10492?section= :Now this is good! I did play around with the spices (I can't remember exactly what I did...) and didn't use instant rice or anything like that...just brown rice. I added black beans at the end. We had these in rice bean and "cheese" burritos for dinner. Very, very good.

500 VR Garlic and mustard roasted brussels sprouts

I've made similar brussels before, but these came out really delicious. I didn't use a full 1/4 cup agave or oil, but I didn't really measure the ingredients, and probably had less than 1 pound brussels. Anyway! The flavor combo is great. I would never roast something at 350, so I did about 400 until tender and slightly crispy. Delicious.

HIAV Spicy black bean burgers

Really yummy. I didn't have the peppers, so I used cayenne. I think I used less than 1/2 cup breadcrumbs, and they held together pretty well. I don't know that the flour is necessary, and definitely not 1/2 cup. It might make them stick together a little better, but it made them crumbly on the outsides. The flavor is really good, and texture is not bad. Not perfect, because they are still a bit mushy throughout. Probably not a go-to recipe, but good. I had them with some melted daiya and jalapenos.

Sounds like an awesome library, but you have to pay to check out books?  Libraries here are public supported, but with all our governments broke perhaps we should charge too.  I don't think our libraries have those kind of awesome cookbooks either.

Winters are so short here in Florida, and it never snows, and summers so long, there's no "season" that I prefer soups.

I can get books out from any of the Wellington Libraries but if I want to pick it up from a library where its not held I have to pay a dollar, and there's a dollar charge for the reserve too.  Hmm, not sure if that's clear.

Party Vegan was at a library that would have been may 20 or 30 mins drive away, so I opted to pick it up from the one next to my work - so they charged me a dollar for that.  I don't mind because it means I don't have to drive to the far away library and I probably wouldn't have been able to get there during it's opening hours anyways.

Yeah the Wellington libraries have got tons of vegan cook book but they're always checked out - which is why I don't mind paying to reserve the items.

EDBV

Chick-UN Thai Pizza Very good pizza.  The sauce is a Thai peanut sauce that is pretty good.  I left out the agave nectar because I didn't want it sweet.  I used Thai chili peppers instead of crushed red pepper, and topped with Thai basil instead of cilantro because that's what I had on hand. 

My ownly complaint is that the sauce is too rich to use that much.  I wish I'd cut back some instead of piling it on thick.  I also didn't have light coconut milk and that might have contributed to the richness of it.

creamy, crunchy fruit and nut sandwiches - a fun twist on your standard PB and J sandwich.  My version had peanut butter, maple syrup, raisins, pecans, and apple slices.  The end result was not really all that different from a normal PB sandwich, but a little more exciting.

spiced apple pancakes - these were great.  i didn't peel my apples, needed more maple syrup, and i just left the topping to stay warm on the stove while the pancakes were cooking.  I ended up using pumpkin pie spice mix for the spices since I didn't have a separate allspice.  It's a very forgiving (and yummy) recipe.

black bean and bulgur loaf - this is a really good loaf that becomes great with the recommended basic brown sauce.  I didn't have savory and have no idea what that is, but I subbed some sage and cayenne pepper.

basic brown sauce - this was delicious and i didn't even have the celery.  i will definitely make this again and am looking forward to it with the celery.

carrot ginger dressing - hmm.. i may have done something wrong, but  i didn't like this... it was way too potent.  i think i might have added too much ginger, as it overpowered everything else.  i added more orange juice but then it was just ginger + orange.

JOVB-sugar cookies
I've tried this recipe twice, and both times wound up with a bazillion crumbles and no cohesive dough. I follow the directions to the T, but I'm giving up on it. Boo.

Vegan Table-Apricot Whole Wheat Muffins
Yay! I used AP flour for the ww pastry flour, so they were half whole wheat muffins, but yay! They rose beautifully, had a nice crumb, not too moist like some vegan muffins. Everyone gobbbled them up. I plan on using this as a muffin base from now on. Love.

Vegan Lunch Box-caponata sandwiches
These were so great! Easy to throw together, low fat/cal, and super tasty! This is a good way to get eggplant into people who say they don't like eggplant, as it doesn't have that chewy texture. I'd totally serve this to guests, maybe over pasta w/ greens.

VT - smoky black bean tostadas with garlicky greens

I thought these were pretty good, quick and easy to make.  I chopped up a chipolte pepper in adobo sauce and didn't use any of the optional stuff.

seitan tacos - these are really nice, especially for a quick weeknight dinner. for the seitan, i used the vegan dad lunch meat (made with pinto beans) recipe.  it's a basic recipe, and I might add some onion next time, but it doesn't really need much tweaking.

VWAV's Carrot Raisin Muffins. These turned out pretty good and I got 2 extra muffins out of the recipe. I thought these could be a bit sweeter (never mind i just ate another one), my brother thought they were fantastic. I give this recipe 4 out of 5 stars.

I then proceeded to make VWAV's Curried Split Pea Soup and this was a winner! First time cooking with split peas and this turned out great, thank God.

I also made VWAV's BBQ Pomegranate Tofu and it turned out alright. I left off the pomegranate seed topping cause that just seemed like a pain in the ass to do. The texture of the baked tofu was awesome but again, another BBQ sauce recipe from this book that just didn't tickle my fancy, too tomato-ey and sweet, and way too much for this recipe! I say you could easily half the BBQ sauce meant to bake the tofu in, I didn't even put the full amount on the tofu and ended up scraping the sauce off. It was way too much! Not a complete fail, but I won't be making this again. Though I will use her tofu baking technique: 2 tablespoons oil + 1 tablespoon Braggs, cut the tofu into 8 pieces, place tofu in the oil and Braggs mixture until completely coated, bake at 350 F for 30 minutes, turn over after 15, and add sauce and bake an additional 15 minutes. Perfect texture!

VWAV's Lemon Gem Cupcakes. These were an epic fail for me but I do admit, I really suck at making desserts and baking. First off, the cupcakes didn't rise much and ended up sinking once they got out of the oven. No big deal right? I will just cover them with the frosting. I go to make the frosting, another epic fail. I used EB buttery sticks for the recipe and something went wrong and I had to maybe double the powdered sugar and it was still runny and now way too sweet. Next fail, the cupcakes stuck to the liners. I was pissed, I ate a few, and threw the rest away :(

Vegetarian Times:

Vanilla Pound Cake with Lime Glaze (http://www.vegetariantimes.com/recipes/10222?section=): ...minus the lime glaze. I made it a vanilla glaze. Anyways. This was good! Not at all too sweet....it didn't have the dense pound cake texture that I remember. Good nonetheless.

AFR:
Everyday Chickpea and Quinoa Salad: Very good! I made this with bulgur rather than quinoa, added some steamed carrots and broccoli, and some cubed tofu. I really like the flavour of the dressing. Will make again.

Easy Breezy Cheezy Sauce: The best cheeze sauce I've ever had! Is it the broth powder that makes the difference? I'm not sure, but I love this. I'll make it again soon to dip veggies in (fondue!).

Mac and Trees: Loved it considering I loved the cheeze sauce. I added more broccoli than what was called for and used orechiette pasta because that was all I had. Tasted good cold, too.

VT - Sweet potato stir fry

This was pretty good. Ordinarily sweet potatoes aren't something I'd associate with Asian food, but this works.  I did not use the broccolini because it was too expensive.  I used regular bok choy from my CSA rather than baby bok choy.  It was too greasy and I even cut back on the oil.  A total of 7 tbs of oil is too much.  Also I didn't have 4 tbs of mirin, but only two and that was plenty as the sweet potatoes are sweet enough without a lot of mirin.  More would have been to sweet for me.  I used Thai chili for heat instead of crushed red pepper.

brown rice with artichokes, chickpeas, and tomatoes

Not bad. I added some roasted red peppers and black olives, and used basmati rice. Not really something I'd make again, but won't mind eating the leftovers.

Thai kale with coconut milk

Eh. I thought this was a waste of coconut milk, and I love coconut milk. I think the pepper flakes are definitely needed, but it all doesn't really meld well together. Flavor was pretty good, but the milk stays pretty liquidy, and it's just..there. P wouldn't even taste it!

Also made my modification of the basic flatbread recipe that I make allll the time.

HIAV- dijon scalloped potatoes
definitely comfort-foody, but I have had better. The sauce didn't really soak down into the other layers, so the top was really flavorful, but the rest needed salt. Not bad, though.

VT-morroccan meatballs and couscous
pretty good. My husband loved it and said it tasted like BBQ. I did add some cumin, because it was too sweet for me w/o it. It was better after it sat a bit and the flavors married. Really easy, I'd prob. make it again.

Vcon cheater baked beans

I had to make a few changes based on ingredients, so mine came out a bit differently. I only had blackstrap molasses, so I used 1/4 cup of it, plus 1/4 cup brown rice syrup. I also had to use 1 can cannelini and1 can kidney. That being said, I followed all other directions. I can see how they would be better with small, white beans. The flavor is different, and I think it needs just a tiny bit more sweetness (at least mine did), and more salt. I prefer BBQ beans...not really worth the trouble, imo.

AFR ginger mashed sweet potatoes and apples

I'm always looking for ways to like sweet potato, and I do like this! I followed the recipe (peeled and everything), tasted, and then added more cinnamon and just about 1 tsp agave. I think I had a tiny bit of water leftover, because mine seem a bit too thin. It seems like a flavor that I'll easily get tired of, but I did at least enjoy it.
