Easter Dinner Ideas?

My New Year's resolution this year was to go vegetarian (I'm Lacto-Ovo), so this will be my first big holiday sans-flesh. I was wondering what the seasoned vegan/vegetarians eat for the holidays? I was considering picking up a Tofurkey Roast, but I'll be going to my aunt's house where the oven will probably be occupied by the ham. Anyone have a few recipes I can pre-prepare and reheat on arrival? Thanks!
I think the original source of the recipe was the hillbilly housewife.

That being said the recipe did say vegetarian broth.
hey! i was at the store today and saw the goya ham powder! it is in fact vegan - it says 'artificial ham flavor' on the ingredient list. it was about 1.69 a box and i felt like i HAD to buy it cus of this thread. i feel like i remember liking ham... we shall see.
I am torn between vegan spanakopita and vegan spinach quiche. Which one will reheat better? Probably the quiche. Has anyone tried both? I always think of spinach when I think of Easter for some reason ::)
I think I've eaten the quiche reheated in the microwave and it was fine. It's also perfectly fine to serve quiche at room temperature (that's the French way, as I understand it); I've eaten it this way and it's good. I've never made spanakopita of any kind; so I can't speak to that.
i was thinking of doing the vctotw cookies and creme cupcakes and using the purple creme easter oreos - or just putting a drop of food coloring in the frosting.
of you can do any cupcake and color the frosting to look green like grass and put sprinkles or jelly beans on top to look like eggs.

I'm want to do this with the VCTOTW coconut lime cupcakes! Are there any common brand jelly beans that are vegan?
Maybe you could use Skittles instead?

As far as I could figure out from googling the confectionary glaze (aka shellac) can sometimes be made from bugs. All depends on the source. A lot of foods aren't kosher because it would require kosher supervision.
Jelly Belly has kosher and vegan jelly beans.
I thought Jelly Belly had beeswax? If they don't, I have to buy some now. The pear and peach ones are my faaavorites.

Thank you, propinecone. I baked the Cookies N' Cream cupcakes you suggested for the first time and they came out great! Now the challenge is to leave enough for my little cousins for Easter tomorrow.

I called my mom to ask her opinions as she ate rabbit more recently than I. Her 10 years to my 20 plus. So we decided slight green and gamey. So I am going with steamed chard and shitake mushrooms pureed and added to the seitan mixture. Once its blended together and steamed I think I will roast it just a bit with carrots and thyme. Im also going to serve it with noochy scalloped potatoes, celriac and chives.
First up tho, cake!
