Easter Dinner Ideas?

My New Year's resolution this year was to go vegetarian (I'm Lacto-Ovo), so this will be my first big holiday sans-flesh. I was wondering what the seasoned vegan/vegetarians eat for the holidays? I was considering picking up a Tofurkey Roast, but I'll be going to my aunt's house where the oven will probably be occupied by the ham. Anyone have a few recipes I can pre-prepare and reheat on arrival? Thanks!

I found the Goya ham flavouring, but didn't get around to making the seitan, oh well. I brought baba ganosh to my parents house with crackers & it actually went! I thought it would be too strange, but everyone seemed to like it.

For dessert I made FANTASTIC cupcakes. Coconut lime from VCTOTW. I know I made some substitutions, but I forget what exactly they were. I didn't use any vanilla extract, just coconut extract & extra lime juice I think. They sunk a little in the middle as they cooled, but it actually worked to my advantage.

I halved the frosting & just put a small amount on the middle, but piled it around the top edges of the cupcakes, then sprinkled colored shredded coconut around the top & put starburst jelly beans in the middle, so they looked like little crazy colored birds nests. Everyone really liked them, both the appearance & the taste.

I always make mac and cheese with roasted asparagus on the side.  My husband says it is "Easter-y" because he grew up eating ham on Easter and mac and cheese goes with ham....

Well this Easter oughta be interesting for me.  I usually go to Mom's for Easter and do most of the cooking and planning for the meal.  This year is a bit different because I am strictly vegan and I wasnt last year.  This year Mom (who is an omnivore) is not consuming grains at all and is on this low carb high protein kick.  Then there is my husband and my sister (also coming) who both hate vegetables.  :uhoh:  ::)  At this point I am thinking everyone can just bring their own thing to the table.  Wouldnt it be easier if we were all vegan?  ;)
