Millet

I made a HUGE batch of Millet, because my sons both love couscous and I thought I could switch it up, but it was a no-go. I'm now trying to use it up and sneak it in to everything! Millet is a really good source of protein, iron and B vitamins! It is a grain that looks a lot like couscous, in case you don't know about it.

Here's what I've done:

1. Put a scoop of it in their cous cous...they didn't notice!
2. Mixed a spoonful in with sharway's smokey white bean dip (can't really taste it).
3. Ground some to a flour in the vitamix (about a half cup) then cooked it for 10 min on low with a lid with a cup of water. This came out like mashed potatoes! It is really rich and creamy, and I added Earth Balance and S and P to it...so yummy! the boys haven't tried it yet, but I am hopeful.
4. I am going to sneak some into a chocolate peanut butter smoothie. Will let you know if it goes undetected!

I sometimes worry about Lyle's protein intake because he is so picky, and barely eats any high protein foods. This may solve my problem!

I was thinking about getting some millet - I want to make the Mexican Millet in VCON...
I didn't know it was sooo healthy....

oh, well now I might check that out of the library again so i can make that!
it's almost as healthy as quinoa, I think!
I'm going to give L some right now (the mashy stuff).

I've made it once or twice, and thought it was kinda meh. It's just kinda there. I made the Mexican millet. I do still have some millet left that I keep meaning to use for something. Also...when I first read about it (until I heard someone else say it), I thought it was a silent t..French or something..

nope, pronounced Millet like Mullet with an I.

Try the mash, AC! It's just like mashed potatoes! You do have to grind the dry stuff first in coffee grinder or really good blender.
I just had some more with EB and nooch. It was so good!
And SCORE! Lyle likes it!
He did not like the regular cooked grain though.

Millet is one of my favorite grains.  I like it mushy like mashed potatoes.  I make a dish I call millet and cheeze.  I add about a tablespoon of nutrtional yeast to 2 cups cooked millet and stir until it is mushy looking.  It is good.  :)

Chili with millet mixed in it is pretty good.

if you overcook millet it turns into something like mashed potatoes... it quite awesome! love that stuff!!!! i mix small pieces of vegies in the mixture or millet and make millet burgers.. quite nice!

I made blueberry muffins today. Took some of that cooked millet, vitamixed it with the liquids so it was smooth, and it is not evident in the final product! I'm so excited, because usually my muffins are akin to cupcakes (not super healthy). This makes a big difference!

Thanks YG! I made these tonight. Dh and Noah were not crazy about them, but the finicky Lyle LOVED them! He ate a whole burger, which is highly unusual for him! I'm excited to have something he likes (and was easy to make). I'm almost done using up all this cooked millet! I will never make so much again.

I have cooked it with a little less liquid than called for, and when it cooled it solidified and reminded me of polenta.  Not that corn is totally unhealthy, but a nice substitution sometimes.

Which Millet you are using? Pearl Millet or Shorghum Millet?

I use the kind they feed to budgies. Pale yellow.

Ok. So it is shorghum or Jowar as we call it.
It makes good flat breads (a bit tough to digest for some).
I love all types of millet.
If you happen to go to an Indian grocer, try 'BAJRA NA ROTLA" in frozen section. If you choose SWAD brand, you would get redy to eat flat bread of pizza thickness (flat pizza that is).

Wonderful taste with pickles.
