Hey Veggies,
It's hot and I'm bored with my usual eatings (refried bean burritos, veggie burgers, pasta)so I was wondering what kinds of foods do you eat in this hot weather?
You guys rock!
Salad, roasted veggies, tostadas, corn on the cob, sushi, garbanzo bean salad sandwiches, watermelon sprinkled with pico de gallo seasoning... honestly just about everything except for soup
Cold soups rock! Gazpacho, ajoblanco, or my zuccini (can't spell it today) soup that I posted. http://vegweb.com/index.php?topic=14332.msg89639#msg89639
I leave the bread out of my gazpacho, and add more tomatoes and a good glug of olive oil. The way I make it it's basically salad in a glass.
Tostadas loaded with black beans, shredded lettuce, tomatoes and avocado slices
Pita sandwiches with hummus, greens, cucumbers and tomatoes
Fruit salad, Roasted portobellos, corn chowder, bisques, salads loaded with tons of veggies and topped with homemade balsamic dressing.
Yeah, huge "kitchen sink" salads, and creative sandwiches. I like grilled mushrooms with roasted red peppers and lettuce on wholegrain bread. Grilled pressed tofu or tofu gan is good too.
I like to make eggplant parmesan and eat it cold, or Caponata, or Chopska (grilled veggie salad). All of those recipes are on here.
Even more fruit and salads than usual, chickpea salad and avocado and artichoke sammies, grilled veggies!, cold cereal (as opposed to my normal hot cereal). I cook way less when it's hot out and sometimes just snack on raw fruits and veggies and nuts all day.

:howdy: dinner. Nice to meet you.
Same as everyone else really..... Cold soups, cold salads, smoothies, the occasional burger stir frys, things that can be made quick and dirty basically.
lots of citrusy fruits, nice salads, cold watermelon juice, cucumbers, coconuts - just to name a few
Almost anything you don't have to cook will help you you cool :P
This is excellent cold, I just submitted it and would value someone else's opinion:

cantelope
salads mixed with fruit and veggies
cherries
pasta salad
Tons of salad with broccoli, sugar snap peas, carrots, bell peppers, kidney beans, tofu, green onions, hemp seeds/sunflower seeds/almonds--it's so filling and so much more than "just a salad."
Spring rolls with tofu and fresh veggies
Hummus with veggies
Fajitas with quickly cooked (read: stove not on long) peppers and onions and seitan
Grilled tofu and tempeh
Yes, those with access to an outside grill, use it all you can. The heat stays outside and the delicious food comes in!
This Sudanese eggplant and veggie salad is one of my summer favorites. It can be served room temp or chilled. http://vegweb.com/index.php?topic=32059.0

Man that sounds good! Must try that sometime soon!

I really dig grilled veggies during the warmer months. I usually cover them in a sauce of sorts and put them in a lettuce or rice paper wrap. Salads with a bunch of mixed greens are good too. And portobello "burgers" are good to have while omni family members are grilling up rotting animal flesh (ew!) I usually start craving fresh fruit and sweet corn as well :)
Of course there are always days like today that are uncommonly chilly..and right now i'd love some carrot soup!!
Last night I cut a zuchinni into long, thin strips and made a quick gazpacho. Poured the soup on top of the zuchinni, pretty much summer's version of spaghetti and tomato sauce. Finished with a mojito complete with mint from my backyard. It was a good day.

And it's an authentic recipe. I teach English as a second language to beginning adult students, and one of my Sudanese students served this at a party she threw to celebrate getting a certificate in my class and told me how to make it. I love international cooking!
(mostly) Raw spaghetti
Take a potato peeler to squash and carrots for the noodles and top with a spoonful or two or prepared sauce (not raw) or for a raw alternative, blend some garlic, basil, and fresh tomatoes and cold pressed oil in a food processor. Yummers...
