Hey Veggies,
It's hot and I'm bored with my usual eatings (refried bean burritos, veggie burgers, pasta)so I was wondering what kinds of foods do you eat in this hot weather?
You guys rock!
Oh, another thing. I have a rule that I'll only use the big oven one time a week in the hotter months. I use my toaster oven for everything. I bake brownies, cookies, cake, bread, tofu, and everything else in there. When I do use the big oven, I try to cram in as much stuff as possible. The last time I used it I set it at 300 so I could made 2 types of dog treats and 2 9x13 pans of granola. It's also good to throw in a potato or sweet potato to cook any time you have the oven on. It's free energy! (I'm not talking about thermodynamics here! :))
We've been enjoying our gazpacho- we have a lovely supply of tomatoes so we just keep tossin' them in a blender w/ onion, pepper, the works. It's a remarkably satisfying little soup and so good chilled.
what i wouldn't give for a bit of heat and some sun-derived Vit-D! the weather here in the UK has been pretty lousy this summer (no, make that last summer also and maybe even the summer before that!) - it's chucking it down at the moment in fact - its August for X sake! I've been cooking soups and stews all week! If it ever heats up again, I'd love to make a gazpacho - had one in Ibiza a few years back and it was soo good, served in a ice-chilled bowl.
sounds good:
Last night I cut a zuchinni into long, thin strips and made a quick gazpacho. Poured the soup on top of the zuchinni, pretty much summer's version of spaghetti and tomato sauce. Finished with a mojito complete with mint from my backyard. It was a good day.
Trade you anytime you say, KKL! You can have the sun and heat (46ºC) and I'll take some of that rain. No, wait, I'll just come to yours and you can be here for a bit...I'd just sit around and read any books in English I could get my hands on, and listen to the rain.
Put your gazpacho in the fridge for an hour or so and you won't need the ice. Waters it down.

Wow that's hot! on second thoughts ... man how do you cope in that heat?
When the AC works, just fine. But for the past 2 weeks the AC in the living room has been broken, and we can't seem to get anyone to come fix it because "it's vacation time." (As DH told the man, "Well you don't expect the AC to break down in January, do you?") So I spent a lot of time in the bedroom where the other unit is.
It's cooled down considerably, praise be. I bet it's only, oh, 38º out there now. Above 36 you notice every degree a lot more.
I love to eat strawberries mixed with a little sugar, sometimes heated a bit.
blueberries
vietnamese bean thread salad
gazpacho
cold bulgur salad with cucumber, tomato, carrots, and lemon juice
ice cream, duh
Lots of burgers (I sometimes cook a big batch and eat them cold later on), sandwiches, salads with fruity/sweet dressings... But I really don't let the hot heat keep me out of the kitchen; I love cooking too much!
