how hot to smokers get? i've always steamed seitan...
It wouldn't work if it was dry. You'd need some liquid in there, if it would work at all.
Maybe you could prepare and cook the seitan first, then smoke it? I haven't made seitan yet, but that's what I would try.
but i've baked seitan, too. it can be dry....
