Vegan Bailey's Irish Cream?
Since St. Patty's day is tomorrow, it reminded me that my boyfriend has been bugging me to find a vegan Bailey's Irish Cream. This was his drink of choice in pregan days, and he's dying for a replacement.
I've found this recipe online at the PPK. However, I'm not really sure I like the look of it. I feel like coconut milk tends to separate too much. Has anyone tried this recipe with another non-dairy milk? Also, we don't keep chocolate syrup around. Around replacement I could try, or could I just leave it out?
I'd also be interested in finding a company that makes a vegan version, already bottled. Any leads?
Better than Bailey's Irish Cream
Ingredients:
1 can coconut milk
2 tbs brown sugar
2 tbs chocolate syrup
2 tsp vanilla extract
3/4 cup whiskey
Instructions:
Combine all ingredients thoroughly using a whisk, but do not froth. Keep
refrigerated, preferably in a dark bottle. Old 'Bailey's' bottles are ideal!

3 tablespoons dark chocolate syrup
Mix everything together (it works best when shaken). If using unflavored Silk creamer, adding 1 teaspoon almond extract greatly enhances the flavor.

Ooh! I have Silk Creamer. I need to get chocolate syrup. Um, this might be a dumb question, but are chocolate syrups vegan, or do I need to look for a special one?
Also, I'm not near a Trader Joe's or Whole Foods, if this makes any difference. Is there any way I can make chocolate syrup with cocoa powder???
Hershey's chocolate syrup in the can is vegan (last I checked).
If you heated up the creamer a bit, you could dissolve in cocoa powder and then let it cool back down before adding the whiskey.

Doesnt this not last that long though? like, dont the creamers only last 5-7 days at the max? so ud need to drink this up fast right?
The alcohol should act as a preservative.

My wife and I are trying our hand at going vegan for Lent. Most of our diet was vegetarian based to begin with, so it's not too much of a shock......and we might even continue this AFTER Easter. Everytime I open up the fridge, my bottle of Bailley's is staring at me, so I'll have to try this out tonight. Thanks!
