Just starting on here.
Hi there,
I came across this page while looking for a way to create seitan. I found an amazing thread that was really informative and non-threatening.
I will tell you a little about myself. I am 30 years old and living in NYC. I'm a gay male and have a steady boyfriend of 5 years. I still eat meat and I'm making the switch now to a better healthier lifestyle.
I have reduced my meat consumption to dining out which may or may not happen once a week. I'm in the process of converting all of my favorite recipes into vegan dishes. My goal for 2007 (besides switching out CFL bulbs in all my families homes) is to serve only vegan food at my annual holiday party in December.
That's a little about me. I hope to be posting more soon. My boyfriend is from Guyana and I have a few fantastic Guyanese recipes I would like to share. As well as my native Pennsylvanian fare and some Sri Lankan dishes for fun.

Same here. I am lactose intolerant and found my way to this site. I am in the process of changing to the vegan lifestyle. The people here are extremely helpful.

Here's a good seitan recipe (the cooked in broth kind) from another site that I use all the time:

It is spiced like a lot of chicken recipes (hence the name) but is completely vegan. It gives you a good start, you can then use the finished seitan in any recipe you like. I prefer to brown it up with a little olive oil, nutritional yeast and breadcrumbs.
