I need info on cheese to present to omnis!

Can anyone post a link to a good article or study on dairy cheese? Also, any book suggestions would be awesome. I’m looking for solid information on the cholesterol, fat, calcium, etc. content of cheese. Also, I am really interested in the chemicals in cheese that cause it to be addictive. I’d prefer this information to not be from a vegetarian site. I’m not coming up with much in my Google searches.
I want to present this information to omnis interested in vegan cooking. I’m afraid that if the information comes from a vegetarian site, they will automatically discount it.

A good book resource would be one by Dr. Neal Barnard called "Breaking the Food Seduction: The Hidden Reasons Behind Food Cravings and Seven Steps to End them Naturally". In it he talks about cheese being addictive because it contains small amounts of morphine from cows' livers. I just checked on Amazon and you can get a used copy for $3.49!
im guessing you already know about 'the china study' - although it's pretty long. skinny bitch seems like a quicker read and it definitely seems to open some omnis eyes about what is really in their food - very bluntly.
FYI purpledancer- The China Study focuses on animal protein in general...dairy products are mentioned and proven to be linked to cancer but it doesn't talk about cheese specifically or its addictive properties. BUT, since cheese is mostly casein (milk protein) anyway, you could derive some info from the book in that respect.
