Hey everyone,
I'm new around here and am going to start switching over to a vegetarian eating. Then eventually vegan. One question I have though is I don't eat soy products and all alternative meats are soy based and trying to lesson my gluten intake too, little by little at least... My husband is a total meat eater, but my kids are young enough to take over ;) any suggestions on recipes? or any suggestions for the switch. ? Thank you so much.
Try bean recipes. Bean tacos, bean and grain soup, etc. Freeze your vegetable scraps and when you have enough, simmer them to make veggie broth.
Amen to the beans, especially the incredible flexible lentil.
Also: Go Nuts! Use them as a garnish/snack to keep your protein up, and as great way to get some Omega-3's (walnuts, especially).
Other than that, take it slow, and don't move faster then you are comfortable with. Oh, and enjoy the amazing recipes here!
