:nono: :sheep: ...... hokey pokey is this wonderful stuff, like... crunchy, airy toffee... basically it's made by combining/heating golden syrup (like pale molasses, I guess? a sugar derivative) with baking soda. They make it into tiny balls which they put into ice cream. It's yumbles. ^-^ ;)b Guess it is a :bird: thing, then. :)

:flower: Wikied it! :search: Evidently it used to be a Scottish name... also in ice cream, funnily enough. And hey, :flower: was wrong! - While hokey pokey is ;)b ;)b ;)b ... evidently hard toffee is used in the :bird: ice cream instead, not true hokey pokey.

Oh, well, it's this stuff that Chelsea, the big NZ sugar company, makes...... it's like a paler version of molasses. (Great on pancakes or crumpets! :>) I think you could sub molasses.
