I made a gorgeous soup/broth last night using celery, I remembered your recommendation a week or so back. Oh ... my ... gosh ... so good - I made it without any milky-substance, so I called it a broth! I had a pack of celery lurking in the fridge with half a head of broccoli which I chopped into small pieces and threw into boiling water (yep, just water), seasoned with salt and pepper and onion granules, added some chopped scallions, added the water from potatoes/green beans/carrot I was boiling for the fella's dinner, simmered for 20 mins or so, took half the veg back out then blitzed the remainder with my blender, returned the veggies, thickened with a little cornflour (cornstarch in US?) and adjusted the seasonings again. All in all, it took about an hour to cook. It was so good, a gorgeous green colour and so peppery with the celery that my tastebuds started to tingle! The fella had a bowl as a starter and I had it as my main with a salad on the side; so good that the fella went back for a couple more ladles whilst waiting for his main to finish cooking! He even asked me not to take leftovers to work as he reckons it will be even tastier today, after a full day's melding together! I may submit it as a recipe and get around to doing a pic :)

Here we have 2 kinds of celery: very small bunches (like about 2 oz) of very dark green, tough celery that is used mainly to flavour soups and is then removed. Then the big, heavy white celery bunches that you buy in LIDL here, which is more like I grew up with. Either way, the smell of sauteing celery with a little onion and garlic just sends me into orbit.
You can not have too many celery recipes, or black bean recipes either, for my money!
Besides they do say that it has so much fibre it takes more calories to digest than it gives you..don't know if I believe that but it's a comforting thought! ;)
Please do post the recipe. Those are ingredients I usually have at the back of my fridge wilting. :P
