Fresh Ginger Yams

Ingredients: 

1 yam (or sweet potato)
1 tablespoon fresh chopped ginger
1 tablespoon vegan butter (I like Earth Balance)

Directions: 

1. Cook yam in microwave or boiling water.
2. When yam is done, cut it open and scoop out insides into a bowl and mash them, or just mash, if chopped.
3. Add ginger and butter, and mix well.
No joke, good stuff, and cheap and easy too!
