Mudpie Salad

Ingredients: 

1/2 cup instant black beans dip mix (I use Fantastic Foods)
boiling water
1 cup shredded carrots
1 cup coleslaw
1 tomato, diced
1/2 to 1 cup crushed tortilla chips
2 tablespoons salsa

Directions: 

1. Put black beans in a bowl and add enough boiling water to fill the cup to 3/4 or a little more (you will have to judge this yourself to see what consistency you like). Let sit 5 to 10 minutes, stirring every few minutes until they reconstitute. Add more water if too thick.
2. On a large plate, combine the carrots, coleslaw, and tomato. Top with chips, then beans, then salsa. Mix all together until it looks like a mudpie, and eat!
