Fresh Squash Salad

Ingredients: 

1 skinny yellow squash
1 zucchini
1 small red onion
1 cup sun dried tomatoes
1 tablespoon olive oil
1 tablespoon vegan pesto
salt, pepper and Italian seasoning
1 splash of vinegar or lemon juice

Directions: 

- In a mixing bowl combine all ingredients except your veggies
- Slice the zucchini and squash sun dried tomatoes and red onion very thinly, add to bowl and toss
- Enjoy :)
