Garbanzo Bean Patties

Ingredients: 

1 can garbanzo beans (15 oz), rinsed, drained, mashed
1/2 stalk celery, finely chopped
1/2 carrot, finely chopped
1/4 small onion (or 2 green onions), minced
3-4 mushrooms, chopped
1 large clove garlic, minced
2 tablespoons whole wheat flour
1 tablespoon ground flax mixed with 2 tablespoon water
salt and pepper to taste
cayenne (optional)

Directions: 

Sauté vegetables just until slightly soft. Add to mashed garbanzo beans. Add flax mixture. Mix well. Add flour and spices, mix. Form into 4 patties (careful not to make them too thin, as the patties are soft). Fry on both sides until crispy.
