Garbanzo Tacos

What you need: 

2 (15 ounce) cans garbanzo beans (1 can, drained)
1 (1 1/4 ounce) packet vegan taco seasoning
lettuce, shredded, to taste
6 large tortillas or 12 hard taco shells
tomatoes, chopped, to taste
onions, diced, to taste
salsa, to taste

What you do: 

1. Dump both cans of beans into a skillet (but use the liquid from only one can). Dump in the taco seasoning.
2. Stir and let simmer for about 10-15 minutes.
3. Add beans and other ingredients to your tacos, burritos, and/or taco salads.
Especially good recipe for those who aren't crazy about the flavor of garbanzo beans. The seasoning takes over.

Made these last night and they were very very good even my DH who isn't crazy about beans loved them.

I sauteed some red onions, green peppers and a little garlic before adding the chickpeas to the pan and simmered for a while with a little water to soften and then mashed about half of them till I got a pretty good consistency before adding the taco seasoning.

This recipe is great! It's very versatile, you can pretty much add whatever you like to it...this is a great go-to recipe for weeknight dinners, my 7-year old son just loves it!  ;)b

These are good. I made it just for me so cut I cut the recipe in half and still had left overs. I had no toppings (tomato, avacado and such) so still good but next time should be better when i have those things.
I love that its crazy easy and fast.
Will make again. Probably many times.
