General Tao's Tofu
1 (12 ounce) box firm tofu, in 1" cubes (frozen and thawed, if desired)
1 egg equivalent (e.g., EnerG Egg Replacer), prepared
3 tablespoons + 2 tablespoons water, divided
3/4 cup + 1 tablespoon cornstarch, divided
vegetable oil for frying + 3 tablespoons vegetable oil, divided
3 green onions, chopped
1 tablespoon minced ginger
1 tablespoon minced garlic
2/3 cup vegetable stock
1/4 cup granulated sugar
2 tablespoons soy sauce
1 tablespoon white vinegar
1 tablespoon sherry, optional
red pepper, to taste
steamed broccoli, to serve
1. Mix the egg replacer as specified on the box and add an additional 3 tablespoons water. Dip tofu in egg replacer mixture and coat completely. Sprinkle 3/4 cup cornstarch over tofu and coat completely. Watch out that the cornstarch doesn't clump up at the bottom of the bowl.
2. Heat oil in pan and fry tofu pieces until golden. Drain oil. Heat 3 tablespoons vegetable oil in pan on medium heat. Add green onions, ginger, and garlic; cook for about 2 minutes. Be careful not to burn garlic.
3. Add vegetable stock, sugar, soy sauce, vinegar, sherry, and red pepper.
4. Mix 2 tablespoons water with 1 tablespoon cornstarch and pour into mixture stirring well. Add fried tofu and coat evenly.
Serve immediately with steamed broccoli over your choice of rice.
SO HOW'D IT GO?
I really want to make this but need to know if there is any way possible you can use something besides cornstarch? I'm allergic to corn! :(
Not that this recipe NEEDS another review, but here goes... This was way good... not mind-blowing, but very tasty. The fiance LOVED it. I doubled the sauce as most people suggested, and there were lots of leftovers for lunch the next day. Thanks!
This is a fantastic recipe! I've never had general tao's chicken, but it smells so good when my partner cooks up the president's choice kind. This stuff smells much the same and tastes absolutely fantastic! I love the idea of coating the tofu. Makes it seem so sinful. I've also just made the sauce and added it to udon noodles, edamame, broccolli, and different types of meat substitutes. It's wonderful!
:D :)>>> :o What can I say, AWESOME! I didn't use veggie stock just water...and I don't have egg replacer, so I cooked 2 tbs of ground flax and 3 tbs water until gummy like egg, and used that. I would say next time I won't fry it. Maybe broil with some oil in pan. I also added ground red pepper to sauce before I cooked it. The instructions said something about red pepper but it wasn't on the list. Next up: Orange tofu!
I made this for dinner today, loved it! I've never frozen tofu, so I wasn't sure I'd like the results. I now know that I like the texture and that I can use frozen tofu in other recipes. Thanks for sharing!
This was freakin' delicious! I wasn't as spicy as what I remember general tao chicken being, but I forget the red pepper flakes, so.. I also didn't read the instructions correctly, and poured the 'egg' onto the tofu, then poured the cornstarch on it.. It was a little cornstarchy, so next time I will do it the proper way :P But it was still delicious. I will definitely make this numerous times again and again xD
This is one of my favourite recipes. It's really addictive and decadent. I only make it when I want to pamper myself. And as everybody have already said the best part is the sauce (so salty/sweet).
One tip, I freeze the tofu and sauce separately. That way I can have my fix quickly.
Thank you for an astounding recipe. :)>>>
My husband and I both enjoy this dish. so far only made it twice, but sure to make many more times. Both times we had with rice noodles and doubled the sauce...........I keep the tofu and sauce seperate to store for leftovers. The first time I made it........mixed it all together and the tofu got kind of soggy. Still good but better to mix together later right before re-heating. That is if there are any leftovers.
Hello,
I am 36 years old and I recently decided to become a vegitarian. It is hard becasue all my life I have been a huge meat eater. I still haven't given fish yet, that is very hard to do. I tried this recipe, and OMG! It is wonderful, I also tried the "chicken' strips from morningstar....It turned out great, i also added mushrooms...I am very pleased with this recipe. Thank you... :>
;)b
I first read this recipe almost three years ago, and for whatever reasons never made it.
Tonight was the night. Awesome.
I used Butler Soy Curls, rehydrated and squeezed of excess liquid, actually mixed the EnerG (dry) with about a quarter cup cornstarch in a ziploc bag, and did a good shake or two, till all of the pieces were well coated, fried them, removed them from the pan, sauted bellpepper and yellow onion till tender, removed them to the same waiting bowl as the Soy Curls, made the sauce in the same pan, and then poured the sauce over when it thickened. Served on basmati rice. Delicious.
I have seen this recipe reenacted on blog after blog after blog so many times I can't believe I hadn't given it a try before.
Ms Rubybean77 Thank You. You posted this recipe on 08/18/03, and I for one am glad that I followed your culinary footsteps.
