HELP: PROBLEM WITH WHOLE WHEAT FLOUR =[

I recently asked about baking with whole wheat flour. I tried two recipes and had terrible results both times.  :(

The first time, I made banana pancakes from Vegan with a Vengeance. I used regular whole wheat flour and the pancakes would not cook in the middle. I tried cooking them for a long time on medium heat, but the outsides of the pancakes got burnt but the inside remained completely uncooked.

Next, I made carrot raisin muffins from Vegan with a Vengeance. I used whole wheat pastry flour. I was supposed to cook them for about 20 minutes, but the inside of the muffins would not cook. I baked them for about an hour at 400 F, and the outside started burning; however, the middles of the muffins remained uncooked!

I was careful not to over-mix either of the batters.

If anyone has any advice for me, I would really really appreciate it!!!   :-\

Neither of these sound like they have anything to do with the flour. Banana pancakes usually stay a bit moister, because of the added banana. The medium might have still been a bit too hot to get the insides done enough.
Whole wheat pastry flour usually acts/tastes exactly like white flour (in my experience). I'm not sure what the problem was with the muffins, but I don't think it was the flour. I would stick with the whole wheat pastry flour.

Sorry, I am sorta new to this website. I appreciate your advice and I will definitely keep using whole wheat pastry flour.  :)

damn, i already voted.

i usually use regular whole wheat flour rather than pastry flour when baking whole grain. Cakey things come out a little heavier (no big deal usually), and doing half white half whole wheat usually results in a pretty similar texture to all white for me. I think the cooking time/texture is more identical between refined and unrefined flour for dried baked goods, such as cookies, pie crust, and scones.

I used to have this exact problem. It was resolved for me when I picked up a cheap oven themometer and discovered my oven was running hot. If you haven't already checked into this it might solve your baking troubles. Good luck!

Definitely get an oven thermometer. The cheapest one you can find will do. Baking problems solved.
