Substitute Chickpea Flour for NY

Just a quick question. I just got "The Ultimate Uncheese Cookbook" and am so excited! The problem is I hate the taste & smell of Nutritional Yeast. Alot of the recipes have just 1 -3 Tbsp of NY in them. Could I substitute Chickpea Flour in those recipes? Most the recipes that I'm thinking about making the substitution have already got cashews or cashew butter in them. By the way, how do you make cashew butter?? Signed very excited but extremely confused in Kentucky :o
Icky. Chickpea flour is a TOTALLY different taste... I'm not sure it would go well in a lot of those recipes. Try them with the yeast, and if you still don't like it, I would look up recipes for raw nut cheeses since you seem so keen on the cashews.
Have you had the nutritional yeast in food before or do you just hate the smell and taste of it plain? I don't like it plain, but I think it is really good when you add it to food. It works like magic when it comes to making cheese sauces. I agree with fufu that you should just try them with the nooch. I don't see chickpea flour being a good sub either.
You can make cashew butter by grinding up cashews with a bit of oil in a food processor until it's thick and creamy- or just buy it in a jar.
I tried NY in about 5 different cheese recipes off this site. They all looked so yummy and cheesy, then I tasted them. To me NY just left a bitter after taste. But then again that was the first recipes I tried after becoming vegan :-\
Try some different brands, as well. Some taste different.
What's you all's favorite brand of NY? I'm getting better at vegan cooking, so it might be that I just tried the recipes to soon. Didn't like the taste of tofu at first until I found out thru this site the correct way of preparing/cooking it...now I just love it :)>>>
Forgot to add that the recipes that I tried from this site took alot of NY where as the recipes I want to try from "The Ultimate Uncheese Book" only takes 1-3 Tbsps. Maybe with it not being so much NY, I can slowly get used to the taste/smell of it ;)
Are you sure you've got nutritional yeast and not some other kind, like brewer's yeast? I ask because you say it tastes bitter to you and brewer's yeast is bitter.
Red Star is a popular brand. I just buy whatever is in the bulk bin at my natural foods store.
I buy Bragg's b/c that's what I have access to. I don't remember the brand, but I really liked the kind fb sent me. Kal?
Red Star and KAL are both good brands of NY. Try the recipes how they come to see if you like them. Chickpea flour is not a suitable substitute for nutritional yeast.
i agree with all the above statements... also, maybe you're trying to search out a cheese substitute fast! i hated cheese subs at first but my tastes have changed over time... i would try making things without adding "cheese"... since you are so new to the switch you might be a bit disappointed cause it will never taste exactly like cheese though it can still be good!
I looked at the brand of NY that hubby got me at our local Health Food Store. It's "NOW NY Powder". He also got me something from the bulk bin at the WFS when he was in Lexington, that wasn't labeled so I'm not quite sure what kind that was :D I think you all are right, try different brands and as amymylove suggested wait a little to be making cheese recipes. Although I did make the mozzarella cheese recipe off this site...I made it herbed and hubby was really impressed with it ;)
As always, you all have been most helpful to me making the transition in becoming a vegan ;)b
You probably already know this, since you have The Ultimate Uncheese Cookbook, but if you're using powder instead of flakes, you should use less. The book says, "use a scant 1.5 tablespoons of powder for each 2 tablespoons of flakes called for in a recipe."
