Hi. ^_^ Veggie lurker in need of a bit of help. Two quick questions...

1) I once found a recipe for a vegan "cheez" sauce mix that you could mix up in quantities and store it. When you wanted to make the sauce, you could take some of the mix, add liquid, and cook it. The sad thing is, I seem to have lost the site.  :-\

2) What would be the best seitan recipe/method for a meat-eater? DH likes his meat and such, but I'm trying to get him to eat healthier, and if it isn't as close to the real thing as possible, he won't touch it.  :-[  I haven't made seitan before, but I'm willing to if it gets him eating healthier. Plus, it would be something good to try with my miniatures.  ;)

Any help would be greatly appreciated.
