What did you cook/eat today: Parents and Kids Edition!

So...who's willing to share what their kids actually eat on a day to day basis? My little girl is 7 and in 2nd grade in public school IN TEXAS, so almost everything she eats has to be homemade. She just ate hummus on toast and two pickles for breakfast because I'm busy answering work emails. Oops.

Yesterday:
B: vanilla Silk yogurt w/strawberries and blueberries. Chai for her, coffee for me.
L: Tacos w/black beans, spinach, salsa (avocado on mine), leftover rice
S: popcorn, smoothies
D: giant veggie stirfry (squash, broccoli, cabbage, baby bok choy, carrots, celery, green onion, garlic, snow peas) with tofu, steamed rice
We made some strawberry muffins (from Vegan Brunch) for dessert...and I had two glasses of wine  :P

Other parents...chime in please?

L-tofurky and cheese sandwich, sliced tomato w/ oo, sugar and salt, clementine, blue cornbread muffin w/ jelly and eb
S-Clif Mojo pb&j bar
D-waffle, see, she didn't have one for breakfast, which I thought was cool, but then she insisted on one for dinner. She had some baked tofu, too, but no veggies.

babysgotsauce: you always say noodles with earth balance... so it's just pasta noodles mixed with butter? what kind of noodles? do u like to eat this too?

yes, organic whole wheat noodles with Earth Balance mixed in it....just a basic kid-friendly dish...sometimes I try to add vegetables cut very, very small, but she usually throws them out.....for adults maybe add some garlic and nutritional yeast or Parma

no prob amy :) I guess its obvious, but as for the shape of the noodles I use whatever I get in bulk, ususally penne or spirals, but it could really be any kind and be fine.

B: oatmeal with soymilk, maple syrup and raisins.  Toast with sugar and cinnamon, coffee with Silk creamer, and a couple mini pumpkin muffins (recipe from this site).  (my son had soymilk rather than coffee!)

Snack and lunch are for me, my son is eating his  own snack and lunch at daycare:
S: raw almonds with a banana
L: left over white bean quesadilla (recipe from this site) and a salad made with fresh spinach, vegan ranch (recipe from this site), pumpkin seeds and shredded carrot.

Dinner is for both of us tonight after work and daycare:
D: left over tofu stirfry (stir fry sauce from this site) with stir fry noodles and probably an apple with peanut butter for dessert.

My son is eating the same except lunch and a snack which I  had to  pack for daycare:
L: Boca (vegan) chicken nuggets, green beans and whatever fruit the daycare is serving.
S: Soy yogurt, and a pear

D- three bowls (!!!) of broccoli potato soup, ww baguette, salad

She must be growing again, because I swear the child eats twice what I do...

L: leftover cold udon noodles with seitan and peanut butter sauce (Vegan with a Vengeance)
S: soy yogurt with blueberries and homemade granola ("My Favorite Granola, Flavorings Flexible" from VW)
Pre run snack: 1/2 bagel with EB
During run: 1 pack Luna Moons, Pomegranate flavor
Post run snack: chocolate granola
D: tofu scramble (Vegan Table), tempeh bacon (Vegan Table), lemon poppy seed muffins (lemon poppy seed muffins)
Then I made banana nut bread cookies (VW) and ate one of those!

all kea wants to do is snack.snack...snack....luckily its mostly on fruit so no worries!

I've finally gotten into a feeding rhythm and have been giving her some solid foods every time I eat, but she still vastly prefers nursing. Anyway, yesterday:

B: 2 shot glass-sized portions of my breakfast smoothie (consisting of banana, blueberries, strawberries, orange, spinach, and hemp seed)

L: a sweet potato/red lentil/kale puree (about 4 tbsp)

D: mango with almond butter (2 tbsp mango puree and 1/2 tsp almond butter)

D-tons of guac, black beans, tortilla chips,
s- blueberry, banana, rice milk smoothie, another cookie

(jeez other than the onions in the guac she had NO veggies today....sigh......better luck to me tomorrow!)

Yesterday was baby girl's birthday! She's eight. I tried to negotiate and get her to go backwards this year and turn six instead, but no luck. Her party was so fun, but after having 15 kids ranging in age from two to ten tear up my house I am left with quite the mess. Due to food allergies, everything had to be vegan, gluten free and peanut free...

B- Ezekial toast with almond and apple butters, tea

L- two samosas, clementine, carrots, pita and hummus

Party food: rice crackers, grapes, edamame, homemade sushi (tofu, carrot, cucumber and avocado in different combos rolled with brown rice and nori), chocolate raspberry cupcakes. It was great!

D/S- black beans, tortilla chips, pear

yay mamaA! congrats on the big girl! they grow up tooooo fast!!!

today..tried to make up for the no veggie day:(
So I just went for it and gave her sides of raw, very small cut up pieces of veggies w/ each meal.  She surprisingly ate a couple handfuls of brocolli....sometimes it does pay off...sometimes...
b- soy yogurt, banana
s-banana, 1/2 box of rasins
l-noodles w/ EB, 1 Joe-Joe cookie
D-BROCOLLI!, more noodles, bite or so of banana
s-another Joe-Joe, box of rasins

Myself:
B: peanut butter pancake with blueberries and syrup and soymilk
L: left over butternut squash and tofu stuffed shells, and if I am still hungry some left over tofu stirfry
D: I think dinner tonight will be left over vegan Mac n Cheese with peas and carrots and tofu dogs.

My son
B: baby oatmeal with half of a banana, and breast milk (I barely have any left in there but what little I can get out I will give to him!), and a cup of almond milk
S: piece of cinnamin toast with EB and some fruit
L: Fruit with left over butternut squash and tofu stuffed shells (I was lazy this morning), and some chocolate chip cookies
S: Grapes with soy yogurt with some fresh blueberries mixed in.
D: same as me, we eat together

Today the kid had:
B: berry smoothie & ezekiel english muffin w/ eb
L: PB&J on rudi's whole wheat bread, nori, dried cranberries, flax crackers
S: nori-tamari brown rice cake
S: more smoothie, spring roll (w/ carrots & beanthread noodles)
D: homemade waffles, maple syrup, and some brown rice noodles (very mushy - won't buy them again!) with nooch, s/p, & olive oil

Gotta go to the store...out of kale & she's hard up for some kale chips! :)
